EVs are capped at 510 total. Super Training doesn't bypass this limit.
You can't "dump all your EVs into attack, HP, and speed" while also "buffing defense and special defense slightly."
At most you can max out two stats. That lets you dump 6 EVs into something else. Or you can do a spread that doesn't involve maxing out, but no one would recommend spreading EVs over five stars.
Talonflame EVs depend on the role, but a Bulk Up set wants 248 HP / 252 SpD / 8 SPE. An offensive set wants 252 ATK, somewhere between 136-252 SPE depending on what you need to outspeed, and the rest in HP (or DEF if you only have 4 left so you can switch into Stealth Rocks twice).
It would literally never be efficient on a Talonflame set to divide EVs between HP, DEF and SpD.
