Games like Mario Galaxy and Okami still look great because of their art style, but Pokemon games have really only ever been "good" graphically.
They'll age well, but that's because they never try to break the mold or go above and beyond the graphics at the time. Games that do tend to look great for a couple years before being outclassed, while Pokemon stays at a baseline good forever.
The spritework and now modeling in Pokemon games are good, and there are some great setpieces, but I prefer something like Professor Layton vs Ace Attorney, whose art is very stylized and thematically interesting.
