Fairy is resisted by Fire so Charizard X doesn't end up with four weaknesses.
Fairy resists Bug and Dark so Gardevoir doesn't get more weaknesses with its type change.
Fairy is immune to Dragon (rather than just resisting it) because of Dragon Gem Draco Meteor Latios. Which is also the reason that all Gems were nerfed.

Steel no longer resists Ghost and Dark because of Aegislash and maybe Metagross.

ITT: Mechanics that were made with only one Pokémon in mind

That seems like a bit of a stretch. It's possible Game Freak wanted to weaken Volt Turn bullshit

That's clearly wrong. Neither of those pokes are good, Jirachi is ok at best, while Aegislash with only two weaknesses would have been broken.

Although to be fair GameFreak bans event legends in VGC anyways, so I doubt it was for Jirachi

Those are pretty weak and gimmicky strategies in doubles/VGC. As is using VoltTurn for damage. The whole unpredictability factor falls flat if you can only switch to two other Pokémon rather than five. And I say that even though I did use VoltTurn on my Manectric and Talonflame to some success last VGC season. But not as a primary strategy.

And if they added another Bug resist because of U-Turn, why didn't they also add an Electric resist for Volt Switch?

Even the generic 'earlygame' bugs were great like Leavanny and Scolipede, as opposed to older trash like Dustox, Mothim and Butterfree

Fairy is strong against Fighting, Dark, and Dragon because all of them but Dark were great offensive types as STAB (Fighting is also one of the best types for coverage too) and defensively they only had 2 weakness. They probably needed to nerf Dark after removing Steel's resistance to it as most Dark types have pretty good coverage and making Steel vulnerable to their STAB would've made them ridiculous
