Let's say someone has never played Pokémon before and comes to you to ask where to start.

Do you start them at the originals or do the remakes make them completely superfluous?

Rby gsc had their charm when they were new, but the remakes improves on, and add to the experience, making them ideal. I'd say the originals are all but redundant at this point

start with XY or ORAS. It's obvious that gen 6 is the most friendly towards new players.

Plus with XY they can enjoy all those catchable mons.

Honestly every pokemon is good for beginners.
What cover pokemon do you like the most? Take that and go for the remakes over the original.
Maybe skip Black2 White 2 as first game, but even those could work

Not only the Frontier, but it also includes Gym rematches, improved the Pokémon selection during a playthrough, has improved teams for trainers and Gym Leaders and uses both evil teams equally. These changes were all ignored over using the flawed Ruby and Sapphire as a base instead. Also, you can transfer Pokémon from Emerald to Platinum and HGSS while you go along. I like ORAS but Emerald is quite different, and it's worth playing both.

For anyone who thinks old automatically means worse(like a lot of /vp/ for some reason) just skip all older games and go straight to XY and ORAS.

Baring that, I'd say XY, since it's one of the easier games, and has things that might appeal to a newcomer, like Pokemon-Amie.
