The special attack meter normally takes a while to build up, but the demo tweaked the mechanics so it's almost always full. Your HP also doesn't normally regen automatically in the actual game.
Every Youkai has several set attacks: A physical attack, a magical elemental attack, a buff/debuff, and a finishing move. Different Youkai use different buffs/debuffs and have different elemental magic. The stats also vary greatly and each youkai has a changeable personality that determines how often they take each action. For example, it's usually a good idea to keep a high defense Youkai in the back row that you can use to sponge up damage while despiriting your main line and giving him a personality that makes him guard. Each Youkai also has an ability, which work essentially like Pokemon's abilities.
The demo really, really isn't a good indicator of how the game works. There's actually a lot of depth to team building. However, the game never really bothers to provide a challenge that really requires putting any thought into your team, outside of a couple post-game superbosses. Like, if you think your ability to plow through a Pokemon game with any bullshit team is bad, it's super common for importers to get through all of the content in the game without even knowing what their Youkai do.
