First, it's named Adaptability, which sounds like it would be a jack-of-all-trades ability, adapting to situations where you don't normally have an advantage. Instead it makes you better at what you already do all the time. If it had the opposite effect, giving STAB for all types, the name would make sense.
Second, the super-STAB is just plain uninspired, like fan megas giving everything Huge Power. Almost any pokémon would benefit greatly from Adaptability, there's nothing distinctly Lucario about it.
If I could change Mega Lucario, I would either give it Mega Launcher (naturally learns three of six relevant moves, can learn two more by TM and tutor), or add more spikes to its model and give it Iron Barbs.
