Now, it's common knowledge that you don't pronounce it Poke-Mon, and because we know it's from a different language, pronouncing it phonetically according to english, Po-keh-mon, seems silly at first glance. So we default to what we think of, and due to protrayal of the japanese language in media, the obvious answer seems to be to pronounce a long e.
