Bowser doesn't look like a dark type really, and he's not evil in every game. I"ll admit that Dragon type isn't the best typing for him but Dark/Fire definite isn't "perfect"

It's not really that dragons "own" castles but that they attack castles and often have an association with them. Bowsers association with castles is also not the only reason Dragon type would be a reasonable typing. There is also the fact that he breathes fire and sort of looks like a dragon.
