Heracross is a mech with rocket punches and claw missiles, and is actually a hercules beetle now. It's a thematic circle with mechs being based on samurai, and samurai being based on beetles.
Steelix is earth's core, hence the immense pressure causing crystals to erupt from his body, and his gravitational pull causing the metal shards to orbit him. It's a natural extension of his design based on his type and size.
Houndoom gets an elephant graveyard motif to represent desolation. The little skull pendant turns into a full demonic skull that also alludes to cerberus.
Tyranitar turns into super godzilla.
Sharpedo doesn't "just get spikier," it gets more scarred, like a mature shark, and more streamlined with a natural weapon on its snout so it can actually ram into shit like a torpedo. The stripes also reference tiger sharks and the teeth reference sawtooth sharks.
All of them change their shape and features as well in subtle ways. Just because you don't understand the designs and have no eye for detail doesn't mean they're bad.
