If only a single new Pokemon were introduced, it'd just be more convenient to refer to that Pokemon by name including the other mechanical associations that came along in the games with that Pokemon's introduction.
If there were only 10 new Pokemon, and people found it more convenient to refer to these 10 by calling them "Gen 7" Pokemon, there isn't anything wrong with that.
We could even have discussions using Gen I, Gen II, Gen III, Gen IV, Gen V, Gen VI, The Fabulous Ten, and Gen VIII instead.
It's just convenience.
