Not to mention the Karate Dojo, which was a Gym, until the Psychic one put it out of business. You only need to see 8 Gyms in the anime/gyms, because that's all you need to go to the League. The Pokémon World is much larger than what you're exposed to, and there's nothing to suggest there wasn't more Gyms and towns and shit we haven't been to.
