Jirachi is explainable. It's based on a shooting star, so it carries traits of both stars and meteors. It's Steel because meteors are associated with metal, it attacks with sunlight because it's a star's light, it's called Doom Desire because a meteor wiped out so much life, and that's a steel move just to fit it's typing.

Solgaleo isn't, other than that fire is overused as a Legendary type and that it could represent a fusion reactor.

Solgaleo is also a meteor. He's associated with the sun, but he's not supposed to represent the sun in the same way that, for example, dialga represents time.
