ORAS has Rutile Ruby/Star Sapphire, Rising Ruby/Sinking Sapphire, and Meme Sapphire.
Rutile/Star are difficulty hacks that do not change any stats or movesets and do not alter the wild Pokémon distribution, with the exception of adding post-National Dex Pokémon to areas from the start (this was done so any Pokémon you catch in the game is completely legal and can be used in official games). It's balls-to-the-wall hard and you reach the level cap for trainer teams before the Delta Episode.
Rising/Sinking is a Drayano hack, if you've played one of his games you know what to expect. Changes to base stats and movesets, wild Pokémon distribution is heavily altered so all 721 can be caught, and it has a less difficult level curve.
Meme Sapphire is a merging off the above two, with the base stats, movesets, and wild Pokémon of Rising/Sinking and the more extreme difficulty of Rutile/Star.
Whichever of the three ORAS hacks you should play is up to your personal taste.
