The Pidgey line gets Pidgey candy, Schyther gets Schyther candy and so on. The amount of candy needed to evolve depends on the stage of the pokemon. Pidgey needs 12, Pidgeotto needs 50. For a two stage pokemon like Goldeen and Seaking, Goldeen needs 50. Evolving also rewards you experience and stardust.
If you use a lucky egg which doubles the exp you recieve for 30 minutes and mass evolve a ton of pokemon at once, you'll soar up the levels. I forget what level you get your first lucky egg. You'll figure it all out with experience.
