The eggs aren't really eggs, they're more like cradles that are made from Pokemon nesting material. It's possible that at least the mammalian Pokemon are birthed normally. No one has ever seen a Pokemon lay an egg.

Same as Bert & Ernie. Are they gay, do they fuck? No, they're puppets, they don't (canonically) have genitals or sexual relationships. Pokemon are just a collection of data that represents one guy's vision of collecting big scary bugs with his friends in the summer time. The eggs are just there to hatch a Pokemon, you can infer that a Pokemon laid it but that doesn't give them genitals and sexual desires in-canon.

Nah, it's not simply for gameplay's sake. There's been many non-gendered Pokemon. Golurk, a ghost from the previous gen, didn't have a genders ether. Giving the Honedge genders was totally deliberate.
