The disguise is to look like a Pikachu, when it breaks, the head flops in a way a living creature, especially a Pikachu can't do, destroying the chance of it getting mistaken for a Pikachu.

But the creature underneath the disguise isn't a Pikachu. It just admires Pikachu, therefore, Pikaboo wouldn't really work.

So to answer OP's question, I'm glad it's not named that. Mimikyu is so much better.
