What are all of the Pokemon that there seems to be only 1/a few of that are not legendary? In other words, what are all of the unique/rare non legendary Pokemon?

I can think of
Spiritomb
Rotom
Togetic/kiss
Porygon
Lucario
Zororark
Fossil pokes
Ninetails is said to be legendary
Metagross?
Golurk?

Any other Pokemon like that?

I did word it pretty poorly. I couldn't think of a better way to phrase it.

What Pokemon are unobtainable/only seen once in the wild, or unique in that there is only 1/a few of? That are not legendary.

Porygon, as it's man made.
Spiritomb, as there's only 1.
Togekiss/Tix as they seem to be mythical in nature
Rotom as there seems to be only 1
Etc

The fact that there's only one of a pokemon available in a game doesn't necessarily mean that they're more rare in the canon lore of the games...

You could only get one Jynx and one Farfetch'd in RBY for example. It's just a gameplay decision.

Of course. But then there's pokes like porygon and spiritomb where there is only 1, and they aren't legendary. Then there is the fossil Pokemon, which I know there is a few of of each one, but they still are extinct.
I'm just looking for a list of all those types of Pokemon

If there was only one spiritomb it wouldn't be owned by multiple trainers... and there's no reason there can't be multiple porygon either.

There's only a handful of pokemon that are canonically one-of-a-kind or extremely rare. There are multiples of most legendaries too.

Literally all of those can breed, making them automatically not unique at all.

At best you want 1-off encounters or gifts, and most of those get retconned by wild encounters in later games anyway.

lapras is in the wild in GSC (one per friday, but you get the point)
togepi can be caught in the wild in sinnoh
fossil pokemon are extinct
you can get more than one stone in sinnoh, can't you? they're rare yes, but there's no indication that there's only one
beldum are in fact rare, only found in the wild in a sinnoh swarm

Do your own research sperglord, it's not hard to look at pokedex entries, anime appearances and circumstantial evicence and determine whether there's supposed to be more than one. It's clear that there are multiples of the Kanto bird legendaries for example, while Arceus, Dialga, Palkia and Giratina definitely appear to be one-of-a-kind in canon.
