Vaporeon is pretty good too I think. Really the only one you probably definitely don't want is Flareon.

Ghost/Fairy is perfect coverage, Hydration rest Vapreon was probably the best tank in Gen 5 for a while, Espeon was one of the most broken Pokemon in Gen 6 before Baton Pass's complex ban.

Their movepools aren't really any issue. Flareon suffers from poor stat distribution. Umbreon got power creeped due to no reliable recovery outside wish (Which Vaporeon does better). Leafeon and Glaceon suffer from the curse of their typings being shitty inherently.
