So we're all in agreement that even if Ash got spanked by a legend in Sinnoh, it was still better than this rushed league, right?

Without a doubt. Ash actually beat his previously undefeated rival in a test of strategy as well as strength. He didn't just get one-shot by a not very effective move at full health and die to a guy who had no interest in the league.

It may have been more disappointing but it wasn't bullshit. If you want to argue what character deserved to win in the narrative sense then it's fucking Shota.
