Pokemon do need to handle these threats to stay relevant, but they've always had to handle the strongest of pokemon to be on the top. Not only that, but as said before, plenty of pokemon that have no megas can easily dispatch megas if you play your cards right. Mega diancie can sweep only if you let it, because something as simple as a bullet punch from scizor will destroy it. again, you just need to be good.
In regards to teambuilding, it really doesnt. Having one mega forces creativity, it makes people have to make the team work with it or for it, not just put a bunch of powerfull pokemon together. It allows for more ways to build teams. You can use an offensive mega like scizor to make your team much more powerfull and generally pressure the opponent, or use mega aggron and play the opposite way, making it so the opponent has to figure out a way of getting past your raw bulk while you deal consistent damage.
I fyou honestly think having 6 megas would lead to more creative team building than having 1, you're misleading yourself. You are also hillariously contradicting yourself by suggesting that, since if you could just use megas people would just pack teams with them and use just those, like the disaster that was VGC when they allowed legendaries and everybody just used groudon and xerneas. There's a balance that the one mega rule brings that allows megas to shine while not taking center spot to other amazing mega-less pokemon
