Suppose Rockruff changes shape based off the Z-Crystal it's holding. Certain attributes, like let's say it's neck grows longer, or it has a bulkier build. None of that implies that our Pokemon will look like our trainer. IF it did, then they would have to create tons of models for each specific Pokemon that can "synchronize", to have the same look and style as out trainer.
I'm not saying SM will have them, but split evolution stages seems much easier to execute
