Create a layout. Out of necessity, it would have to be on a flat plane probably. Other than that, create your own puzzles. Like some sort of Secret Base Plus.
Edit your team to fit each of the eight gym tiers, along with a post game tier. Each tier will change the level caps, iv/ev caps, move sets, tem size, and legal Pokemon.
Take on NPC characters that come to your gym. When you meet them, your character will decide whether or not they should advance. Beat them if you think they're not ready, or lose if you think they are. Secondary objectives lile "two of your Pokemon faint" pop up, and succeeding at them nets you more points.
The League evaluates you based on performance. You get money, BP, access to better shops, special items, and access to special catching areas as a reward.
Online component lets people challenge your gym. They can leave pre-made comments, and prizes can be distributed to gyms that do well.
You can also challenge other gyms for virtually endless grinding.
