Steel type moves don't produce metal, grass type moves don't necessarilly produce grass, flying type moves sure as fuck don't produce flying, and many other fucking examples.
A move's type is just a matter of affinity, and origin, Crabrawler might not be a water type but it's pretty darn obviously related to some water types, it just adapted differently and lost the type but kept some of the affinities, you'd think with the introduction of Alolan formes morons like you would understand that there's more to a pokémon's moves than its type.

Pokemon's been setting a precendent for not basing typing off a creature's real-life habitat for a while now.

It was especially an issue for Water types for a long type, because there's a fuckton of creatures from the ocean and having to saddle them with a water typing massively limits the design space.

I recently redesigned all of poemon to use 40 types rather than 18, and splitting the Water typing into Swimming and Spray types solves the problem nicely.

Accelgor was designed as a water-type, but was changed to different during development to make the game less lopsided with water-types. Similar to Stunfisk, the one following it in dex. And just like how Stunfisk gets Camouflage to thrive in a water environment, Accelgor gets Hydration and dex entries note how it gets weaker when it dries out.
