The quality has dipped since X and Y, which was already down from BW art. Will it just get worse?

I think they look good but why does it matter, you are never going to be seeing these images in the games. They're not even going to have the 2d trainers at the start of battles they had in Gen 6, everything will be 3d.

The art is fine for human characters, only the Pokemon have taken a (big) hit.

Now I have to wait for the in game model to see if I like a Mon or not

Aside from pokegirl sameface, I think the human art still looks pretty decent.

The art for the Pokemon has definitely gotten worse though.

Gen 6 Pokemon have colours that feel too bright, they are too flat, and have really bad poses. Stufful, Tortunator, Sandyghast and thier evolutions look super bad in art but look fine in game
