Well, some Ultra Beasts, as they aren't Pokémon but still are "fightable", can appear as an exclusive boss battle in one of the versions, the same way you could fight against Iris/Drayden or you could have a match against Reshiram/Zekrom.
And no, they are not Pokémon, the website explicitly differentiates between UB, Humans and Pokémon.
