I've always thought that dark is too good for a gym, but if it were one it'd have to be at least the 6th to take full advantage of some of the great pokemon. Also what would a poison Legendary look like? Mega muk?

Manticore, Harpy, Chimera, Gorgon; there are plenty of mythological creatures who have poisonous abilities. As well as this there could well be a synthetic one that is like the embodiment of pollution.
