In short, canon means all works that are considered an indisputable source of reference(even though there can be retcons, or plotholes within the same work) which events did happen in-universe(I mean from the character's POV) at some point. This can include(or not) multiple universes. A franchise can have more than one canon(pokemon has the games, the anime, the manga and so on).
The concept of canon and multiverses are different since canon is a quality a product has.
Multiverses are strictly an in-universe(again, meaning from the character´s pov) term, they are different things.
To put it more simply, canon entails more than universe. Them saying there are multiple universes in-game doesnt bridge the gap between them and the ashnime since you also need to confirm they are the same canon in order yo say they are different universes within the same canon. That hasnt happened yet.
