That's branding power. If this pokemon had come from deviantart, people would shit all over it. But it's official, so it's genius and you just don't get it.
Personally, the colour combination ruins the appeal for me. I thought Alolan grimer looked fun and planned to use one, but Muk's colour scheme makes me want to vomit. I understand that it resembles an oil slick, but I don't think that inspiration was necessary for the design (the garbage eating + toxic crystal formations were plenty), and it would have been better off without that addition, imo.
I'm sure many people genuinely like the design, but the majority will defend it because they're dogmatic that everything official must be flawless.
