But why are there still so many sprites that aren't showing up?? Did they not put everything in the demo data? I personally think there's tons more, but, what's your opinion?

They're probably just placeholder pictures for the totems, to avoid crashes in case the game calls one of them for the pokédex by mistake, since they obviously won't appear in it.

I think they couldn't possible be so dumb to scrub every possible leakable data except for the Pokedex images.
This was all a calculated move on their part to generate hype.

Also, I simply refuse to believe that there is no legendary trio.

Two of the blanks happen after known totem pokemon. Another is after the Electric bug whose pre-evo has the ability that helps it meaning its likely a totem pokemon itself.
I'm sorry op, but I think its just a placeholder for totem pokemon since they technically have different stats but the same model.

I think the dex is incomplete because this guy from the demo's trailer uses a Pokemon not in the mined pokedex data and he clearly looks like someone you'll eventually fight.
