Dark types fall into one of two categories: Tricksters/Thugs or Brutes/Evil. Not really hard to figure out.

Categorically, they're either feminine, cute, mystical, or a combination. Not that hard to figure out.
Battle wise, they're hardly OP. Very few Fairy-types have any relevance in the meta, and those that do are only in because of a good subtype, stellar ability, or stellar stats. Calling Fairy an OP type is like calling Dragon an OP type.

It's still a far better offensive type than, say, bug and grass, and as for the whole common attack type weaknesses - why do you think they became common in the first place? Pretty big coincidence how all three of the weaknesses are considered good offensive types and attacks that are NFE against it are considered bad for the most part.

Only because of low average BSTs. The typing itself is still disgustingly good. Slap fairy type on a pokemon, and it gets considerably better. Clefable and Azumarill are examples of this.

And honestly this region as magnified the 'silly' factor with things, like Alolan Exeggcutor and Dugtrio, so I think food type isn't that far off. Ice types could be strong against it too, which would give them more reason to exist. I know it's sort of a cringy idea but the tone of Pokemon appears to be shifting in that direction.

Normal isn't really that great, so it's definitely an upgrade. In general though I'd say fairy is only slightly better than water as a type. Steel is still pretty absurd as a type, which was why it lost two of its 11 resistances last gen.
