Why were they too dumb to overwrite the dex models in the demo with data bullshit?

Because they still would have existed. Even if you overwrite something in a code, you have to get rid of the original value. And doing that would have been way harder than just pulling the Pokédex out altogether. I don't get it either anon, but I'm not complaining.

I don't think you know how it works. Replacing each pokedex image with Pikachu would break nothing. It's not some data restriction, they simply forgot.
