Toucan's actually can't fly properly

They have to hop and use their wings to gain distance by gliding

Maybe we'll have another Rowlet situation where the Flying type is replaced by something else instead of the normal typing

Every final stage of an Alola form, except Raichu, has a type that was limited to 1 family (Dragon, Ghost) in Gen 1 or didn't exist (Fairy, Dark, Steel). I can't see it being fire.

There aren't very many, but fully terrestrial crabs are indeed a thing. But yes, because of their ancestry, they still have gills and must keep themselves moist to breathe on land.
