Would you play a traditional RPG in the style of old Final Fantasy and Dragon Quest games in which you play as the Gen VI and VII starters? Chesnaught would take on the role of a Paladin, Primarina as a Dancer/Bard, Braixen as a Mage, and so on.

Nah, that's an arena fighter. An Action RPG would have exploration and a story, and it would be slower. I just don't find another turn based RPG with a limited number of Pokemon appealing, may as well play Pokemon

Greninja - Monk or rogue
Delphox - mage
Incineroar - Barbarian or monk
Decidudeye - Warrior/mage/mystic archer multiclass.

They would work pretty well in a usual 6 member party system. Chesnaught, Incineroar, and Greninja would be in the front row; Decidueye, Delphox, and Primarina would be in the back row. You'd have a starter of each element in each row.
