Totem Pokemon don't have images as they aren't meant to be caught or used by other trainers in multiplayer. The fact that Ultra Beasts have Pokedex sprites (and shinies) that are also used in centers and in the roster feature for multiplayer battles, proves they're perfectly catchable Pokemon.
Not to mention the fact that we also found a special Pokeball resembling their home dimension in the demo datamine. And the fact that Gamefreak explicitly told Polygon that they're capturable.
And the fact that the recent Chinese name character leak (listing off new Pokemon) showed characters at the end of the dex for certain words, including "Muscle" and "Pheromone."
Educate yourself. They're catchable.
