So you can get more than one of the UBs? Lore-wise, does that mean they aren't legendaries or one-off like legendaries?

Not all legendaries are unique.

UBs aren't legends, just strong 570 BST pokemon from another dimension.(weaker trio legends have 580)

They're just Pokémon from another dimension. They aren't necessarily legendaries where they come from, they could just be normal average Pokémon. Something like Kartana might just be an early route shitmon in Ultraspace.
