How do you guys play Pokemon? Do you beat the game and then do more playthroughs, or do you keep the same save forever, or what?

Depends on replayability features. If it has postgame to play over and over without getting tired I just keep the same file, but if it has little to none then I might have to start over. Though I usually ditch those, except for gen 1 and 2 where postgame was a concept that wasn't even born mostly.

Have one version as my "main" save, restart the other version whenever I want as my "sub" save, play a little differently each time.

I restart occasionally after putting all my mons in Bank, but I'm not going to do that anymore in SM because I really don't want to have to rebuild the Festival Plaza and Poke Pelago. I might get a second copy just for new playthroughs at some point though.

You buy both versions

One is for your main game with your living dex + Competitive mons/Contest mons will a billion medals and any other achievements.

The other is to bullshit around with replays, nuzlockes and other challenges

I used to beat the game and do more playthroughs until gen 6 (funnily enough, the gen where you can conveniently bank all your Pokemon).
This is because up until gen 6 I was just a poor kid who's main game was Pokemon, so starting over with a new team every time was all I did.

Now I'm a poor adult, but I at least have a car and afford more games.
