I've seen this in Youtube walkthroughs but no one actually used while battling.

Is there a proof you can use it during a battle?

If you pokemon is affected by status or dirty/wet/horny/etc you can use the refresh immediately.

I've not seen this.
You can get a prompt for it as soon as you faint the last enemy pokemon, but not during the battle itself.

Sorta.
Sometimes after battle you'll get a prompt to hit Y to enter Refresh. If there's no post-battle business like evolutions or having caught a pokemon, your pokemon will turn around and cheer at you before it transitions to Refresh.
