It's cuz the pokemon will look like its normal colors in the cutscene/overworld. It's kinda dumb though cuz they didn't shiny lock the starters this gen.

All the legendaries in XY were shiny locked. Probably to discourage resetting.

From what I've read UBs show up in certain grass patches and you can get multiples, not sure how accurate that is but that's what I remember reading.
