Post game is more Looker stories and finding out you could have visited captain's homes and battled them when they would have still been a challenge. I'm still finding little side things here and there but nothing substantial outside of the battle tree and title defense.
Trials are doing things that make regular pokemon appear 3 times then taking on a totem pokemon. A few are effectively straight lines, others are quizzes, and one involves searching. The more involved ones are teaching a new mechanic.
I liked the story and having all the captains and Kahunas be an actual character in the world really helped.
