By the time god arrives, half of her children were clean, but the other half weren't, so she hid them. Because they hid/were hidden from god, they were cursed and became the Hulder/Huldra (hidden, covered, secret, etc.).
And then, yeah, being the weird hollowed out animal people damned by an angry man in the sky would probably make you hate your tail too.
