I figured they either were working or not there. Working man culture and all, particularly in Japan. I don't see my dad much either and I'm from the west, works very long hours, and I have a lot of study hours for university so our free time doesn't overlap much. I believe your dad in Sun and Moon bought you something in your room, so I guess he's still around, he just isn't featured in game or he didn't come with you and your mother to Alola (yet)
Your mother isn't really a prominent character either, as a general rule (with some exceptions) you only really interact with them at the beginning of the game.
I just kind of self insert personally, I guess it's pretty open to interpretation.
