I've been trying to do some breeding before post-game and I was wondering the best way to know how good a ditto's IV's are without going to the checker, if that's enough possible.

Way too hard unless you know your evs as you level(max em out is one way). Then you can plug different level stats of the ditto into a IV calculator that takes in multiple levels to calculate IVs of that ditto.
