Adamant if you're planning to 100% it eventually where you can swap between the other formes. If you do, then Adamant would be ideal between all formes.

Jolly would be better, however it's bonderline useless for both 50% and 100% so unless you want to use an Aura Break doggo for whatever reason, you'd end up with a shitmon.

What happens if you take a Zygarde you don't own (Wondertrade, GPS, Bank after update) and broke it down at the machine? can you end up with more than 100%?

You can, but only if they don't have any special ribbon I believe (which means that event Garde from XY is 100% useless).
