Why would a monster from another dimension represent this dimension's sun / moon.

Also: SM are great games but their titles and cover legendaries are filler / interchangeable.

No, read Cosmog's profile. Rather than representing the Sun/Moon, they were created by the Sun/Moon. Solgaleo and Lunala are what happens when Cosmog is absorbs a lot of light from either the Sun or the Moon.
