If their owner shows plenty of affection and trust, cats will give theirs in return. Teaching them different things affect their personalities. They still have their own personalities, however. Blue has always been the playful little bastard he is, but Angel (his sister) has always been a shy, delicate little flower who also loves affection.
They're interesting animals to say the least. When you own them you learn the subtle cues they use to show they love you. Crazy shit like blinking very slowly is actually a way of showing affection. I'm not kidding about the blinking, by the way. That's a thing.
I understand the love for dogs too. All animals are really interesting and fun.
