It was done that way in the anime to help children remember the names 90% of the time. Carried over into the games. Really though they actually say growls and grunts, only Pikachu canonically says its own name because it's the series' shitty mascot

Plus typing out "GYAAAOOORRGG" really isn't that much better

People didn't actually know this? It seems like the most obvious thing to me.

The Pokemon are mentioned all the time in the game, their names are plastered over the screen 100% of the time when you are battling, the focus of the game is on the pokedex, there's a shitton of menus, it all adds up to a lot of exposure to the names of Pokemon.
There's none of that in the anime, but they still needed to expose their names as often as possible, hence every Pokemon saying their names whenever they are on screen.

Onix says its Japanese name, "Iwark". Some Pokemon's voices are left undubbed in English. Onix is one of them.

I believe that guy was Takeshi Shudo, the first director of the anime.

Kind of hard to shoot him when he died in 2010.
I guess you could shoot the later directors who religiously follow his formula at the expense of the franchise, but that just wouldn't be the same.

Honestly, if we assume the "pokemon saying their names" thing IS canon to the games (ignoring that we as players just hear cries and shit) part of me wonders if some pokemon like this are "misnamed" or something. Like, people ended up giving them names based on the sun and moon over time, regardless of their "true names" or whatever.

They can: See Anime!Meowth and Detective Pikachu.

It's just that learning how takes a lot of effort unless it's a Pokemon like Mewtwo or Lucario who can just use telepathy to communicate with humans.
