There is a "yuri" aspect to this game, so in the threads for the series, there will obviously be people who want to discuss it. It's not that yuri is being "forced" here, it was already there to begin with because of the game itself.
Also, Chicken-chan is one of the cutest FemMCs pokemon as ever had. While Sun is bland looking. So a lot more people play as her, so they draw her in fan art more and talk about her more.
Yuri is niche, you're right about that. But that doesn't mean yuri is niche in every setting you look at.
