When JRPGs everywhere can do realistic monsters in an amazing and beautiful way, why is GameFreak just trying to make Pokemon look like they do in the anime? Why is GameFreak the only studio allowed to make Pokémon games?

Apple isn't owned by a larger and MUCH more powerful company. GameFreak has as much say as Retro Studios over at Nintendo.

Final Fantasy isn't a collectathon where you train a team of creatures though. The fact is, there's nothing like Pokémon that appeals to teenagers. If a studio other than GameFreak made a Final Fantasy styled franchise that coexisted with the mainline games, they'd sell damn well, maybe even as much as the normal series.

Retro Studios is a first-party Nintendo developer, Nintendo completely owns them.

They don't own Game Freak at all, Game Freak is just an affiliate.

They do, however, possess joint ownership of The Pokemon Company with Game Freak and Creatures Inc.

Game Freak develops games for other systems, but they're not allowed to make Pokemon games for anything but Nintendo systems due to Nintendo's partial ownership of the brand.

OP wants to change the tradition of the console that it's intended for, the target audience, the graphical style, the feel of the game, and the way it is played. And he expects it to just gloss over like it's nothing and sell faster than hotcakes.
