I am not sure what they will do tbh. I feel that they might actually make Sun canon because he is the first champion of Alola. He is also the first protagonist to actually stay and retain his position as champion whereas every other gave up their title to pursue other things. Who would take his place? Hau? Please. They could pull a Hilbert and make him fuck off to Kanto looking for Lillie but I feel like there was a too much development between Sun and Lillie to just ignore Sun completely.
