GameFreak very well remembers it exists, look at fucking Silvally.
If not Darkrai, Arceus will probably be featured in some sort of Postgame Episode in DP Remakes similar to Deoxys in ORAS' Delta Episode and get a new form(e) since Giratina already has the Griseous Orb, and Dialga and Palkia will see their Orbs be given a new purpose.

Arceus should have an origin form cited as mythological and impossible to catch, because I can't face the fact the Pokémon that created everything could be caught by a single boy in his 10's

The Arceus you can obtain via events are probably just Avatars to represent it so it can continue chilling in its own dimension to manage everything.
Same probably goes for the Creation Dragons.
